Ingredients

  • 1 tray (12 units) Cuisine Adventures Spanakopita

Salad:

  • 1 cup (250 ml) couscous
  • 1 cup (250 ml) water
  • 3 tbsp/each lemon, rinds and juice
  • 1 cup (250 ml) mint, coarsely chopped
  • 1/4 cup (60 ml) raisins
  • 3 tbsp olive oil
  • Salt & pepper

Directions

  1. Bake the Spanakopita according to the packaging instructions.
  2. In the meantime, add boiled water to the couscous in a medium bowl, covered. Stand about 15 minutes, fluffing with a fork.
  3. Add lemon (rinds and juice), raisins, olive oil.
  4. Stir well and add the chopped mint, salt and pepper.
  5. Serve with the Spanakopita.
