Ingredients
- 1 tray Cuisine Adventures Mini Quiches
- 2 cup (500 ml) colored quinoa, cooked
- 1 unit sweet yellow pepper, diced
- 1/2 unit English cucumber, cut into small wedges
- 4 tbsp parsley, freshly chopped
Dressing:
- 4 tbsp olive oil
- 1 1/2 tbsp red vinegar
- 1 small garlic clove, minced/grated
- 1 tsp (5 ml) Dijon mustard
- Pinch ground black pepper & salt
Directions
- Prepare the Mini Quiches according to the packaging instructions.
- Make the dressing by putting all the ingredients into a jar with a lid, close the lid and give it a good shake until well-combined.
- In a medium bowl, mix the quinoa, vegetables and dressing.
- Serve with the Mini Quiches.
