Ingredients

  • 1 tray Cuisine Adventures Mini Quiches
  • 2 cup (500 ml) colored quinoa, cooked
  • 1 unit sweet yellow pepper, diced
  • 1/2 unit English cucumber, cut into small wedges
  • 4 tbsp parsley, freshly chopped

Dressing:

  • 4 tbsp olive oil
  • 1 1/2 tbsp red vinegar
  • 1 small garlic clove, minced/grated
  • 1 tsp (5 ml) Dijon mustard
  • Pinch ground black pepper & salt

Directions

  1. Prepare the Mini Quiches according to the packaging instructions.
  2. Make the dressing by putting all the ingredients into a jar with a lid, close the lid and give it a good shake until well-combined.
  3. In a medium bowl, mix the quinoa, vegetables and dressing.
  4. Serve with the Mini Quiches.
