Ingredients
- 1 box Chicken Salsa Mini Empanadas Cuisine Adventures
- 1 English cucumber
- 1/2 lb Small red cabbage
- 3 tbsp (45 ml) Olive oil
- 2 tbsp (30 ml) Apple vinegar
- 3 tbsp (45 ml) Lime juice
- 1/2 Bird chili, finely sliced
- 1 tsp (5 ml) Sugar
- To taste salt & fresh ground pepper
Directions
- Halve the cucumber lengthwise and thinly slice. Core and very thinly slice the cabbage. Add both to a large bowl, put aside.
- In a small bowl, whisk together the olive oil, apple vinegar, lime juice, sliced chili and sugar. Season with salt & pepper to taste.
- Add dressing to vegetables and toss well.
- Heat the Chicken Salsa Mini Empanadas according to the packaging instructions.
- Serve the crispy salad with the Chicken Salsa Mini Empanadas.
