Ingredients
- 1 tray (12 units) Cuisine Adventures Spanakopita
Salad:
- 1 cup (250 ml) couscous
- 1 cup (250 ml) water
- 3 tbsp/each lemon, rinds and juice
- 1 cup (250 ml) mint, coarsely chopped
- 1/4 cup (60 ml) raisins
- 3 tbsp olive oil
- Salt & pepper
Directions
- Bake the Spanakopita according to the packaging instructions.
- In the meantime, add boiled water to the couscous in a medium bowl, covered. Stand about 15 minutes, fluffing with a fork.
- Add lemon (rinds and juice), raisins, olive oil.
- Stir well and add the chopped mint, salt and pepper.
- Serve with the Spanakopita.
