Ingredients

  • 1 box Chicken Salsa Mini Empanadas Cuisine Adventures
  • 1 English cucumber
  • 1/2 lb Small red cabbage
  • 3 tbsp (45 ml) Olive oil
  • 2 tbsp (30 ml) Apple vinegar
  • 3 tbsp (45 ml) Lime juice
  • 1/2 Bird chili, finely sliced
  • 1 tsp (5 ml) Sugar
  • To taste salt & fresh ground pepper

Directions

  1. Halve the cucumber lengthwise and thinly slice. Core and very thinly slice the cabbage. Add both to a large bowl, put aside.
  2. In a small bowl, whisk together the olive oil, apple vinegar, lime juice, sliced chili and sugar. Season with salt & pepper to taste.
  3. Add dressing to vegetables and toss well.
  4. Heat the Chicken Salsa Mini Empanadas according to the packaging instructions.
  5. Serve the crispy salad with the Chicken Salsa Mini Empanadas.
