Ingredients
- 2 Cuisine Adventures Roasted Red Pepper Egg & Cheese Bites
- 4 Radishes, halved
- 2 Tbsp (30ml) Red onions, sliced
- 1 Handful (25g) Baby spinach
- 1 Handful (25g) Mixed leafy greens
- 1 Tbsp (15ml) Fresh chives, chopped
Dijon & Honey Vinaigrette
- 1 Tbsp (15ml) Dijon mustard
- 1/4 Tsp (1ml) Honey
- 1/2 Tbsp (7.5ml) Wine vinegar
- 1/2 Tbsp (7.5ml) Water
- 1/2 Tbsp (7.5ml) Extra-virgin olive oil
- Salt & Pepper, to taste
Directions
- In a small bowl, add the vinaigrette ingredients and whisk until combined.
- Heat the Roasted Red Pepper Egg & Cheese Bites according to the packaging instructions.
- In a large bowl, toss together radishes, red onions, baby spinach, mixed leafy greens and fresh chives. Add 3/4 of the vinaigrette and carefully mix together.
- Divide salad among 2 plates, top with Roasted Red Pepper Egg & Cheese Bites and remaining vinaigrette.
