Prepare the Mini Quiches according to the packaging instructions.
Make the dressing by putting all of the ingredients into a jar with a lid, close the lid and give it a good shake until well-combined.
Boil potatoes until fork tender. Drain and leave to full cool, then slice into quarters.
Blanch green beans in a pot of boil water for 1-2 minutes until tender or done to your liking. Drain and run under cold water to cool down, then cut greens in half.
Assemble the salad by placing lettuce in a bowl, then top with everything except for Mini Quiches. Pour salad dressing evenly over mix.
