Ingredients

Soup

  • 1 Opti-pack Loaded potato soup (defrost soup overnight)
  • 1/2 cup (125 ml) 35% Cream
  • 1/2 cup (125 ml) Vegetable broth
  • 1/2 cup (125 ml) Corn cream style
  • To taste Salt & pepper
  • 1/2 cup (125ml) Diced Ham (Optional)


Garnish

  • 1/4 cup (60 ml) Corn kernels, fresh or frozen
  • 1/4 cup (60 ml) Diced tomatoes
  • 1/4 cup (60 ml) Minced green onions
  • 1 teaspoon (5 ml) Olive oil
  • To taste Salt & pepper

Directions

  1. In a small bowl combine the garnish ingredients; corn, tomatoes, green onions, olive oil.
  2. Reserve as topping.
  3. In a medium sauce pan warm the Loaded Potato soup. Mix in the cream, vegetable broth, corn, cream and cook on medium heat for 3 minutes or until heated through.
  4. Season with salt and pepper.
  5. Upon serving, top with garnish in the middle.
