French Spring Salad with Mini Quiches

Salad
- 8 pieces, cut in half Mini Quiche
- 1 head Romaine lettuce, shredded
- 8 each Cherry tomatoes, halved
- 4 each Radishes, quartered
- 4 tbsp Black olives, sliced
- 2 tbsp Red onion, thinly sliced
- 1 cup Green beans
- 2 small Red potatoes
Dressing
- 4 tbsp Olive oil
- 1 1/2 tbsp Lemon juice, freshly squeezed
- 1 small Garlic clove, minced/grated
- 1/4 tsp Salt
- 1 tsp Dijon mustard
- Pinch Ground black pepper
Directions
- Prepare the Mini Quiches according to the packaging instructions.
- Make the dressing by putting all of the ingredients into a jar with a lid, close the lid and give it a good shake until well-combined.
- Boil potatoes until fork tender. Drain and leave to full cool, then slice into quarters.
- Blanch green beans in a pot of boil water for 1-2 minutes until tender or done to your liking. Drain and run under cold water to cool down, then cut greens in half.
- Assemble the salad by placing lettuce in a bowl, then top with everything except for Mini Quiches. Pour salad dressing evenly over mix.
- Top salad with sliced Mini Quiches.
