French Spring Salad with Mini Quiches

Ingredients

Cuisine Adventures Mini Quiches

Salad

  • 8 pieces, cut in half Mini Quiche
  • 1 head Romaine lettuce, shredded
  • 8 each Cherry tomatoes, halved
  • 4 each Radishes, quartered
  • 4 tbsp Black olives, sliced
  • 2 tbsp Red onion, thinly sliced
  • 1 cup Green beans
  • 2 small Red potatoes

Dressing

  • 4 tbsp Olive oil
  • 1 1/2 tbsp Lemon juice, freshly squeezed
  • 1 small Garlic clove, minced/grated
  • 1/4 tsp Salt
  • 1 tsp Dijon mustard
  • Pinch Ground black pepper

Directions

  1. Prepare the Mini Quiches according to the packaging instructions.
  2. Make the dressing by putting all of the ingredients into a jar with a lid, close the lid and give it a good shake until well-combined.
  3. Boil potatoes until fork tender. Drain and leave to full cool, then slice into quarters.
  4. Blanch green beans in a pot of boil water for 1-2 minutes until tender or done to your liking. Drain and run under cold water to cool down, then cut greens in half.
  5. Assemble the salad by placing lettuce in a bowl, then top with everything except for Mini Quiches. Pour salad dressing evenly over mix.
  6. Top salad with sliced Mini Quiches.
