Rice Pilaf with Spanakopita

Serves 4

Cooking Time: 40 minutes


  • 1 tray (12 pieces) Cuisine Adventures Spanakopita
  • 2 tbsp (30ml) butter
  • 2 cups (500ml) frozen vegetables, small cuts
  • 1 1/2 cup (375ml) Basmati rice
  • 2 3/4 cups (687ml) broth, chicken or vegetable
  • Salt & pepper

Preparation Instructions

  1. Melt butter in a large heavy-duty saucepan over medium heat. Add the frozen vegetables and sauté for 3-4 minutes.
  2. Add rice and cook, stirring until it is lightly browned and smells nutty, about 5 minutes.
  3. Stir in the broth, salt, and pepper and bring to a boil. Immediately lower the heat to a gentle simmer. Cover and cook until all of the liquid is absorbed, about 40-45 minutes.
  4. During this time, bake the Spanakopita according to the packaging instructions.
  5. Serve with the Spanakopita.
