Ingredients
- 1 tray (12 pieces) Cuisine Adventures Spanakopita
- 2 tbsp (30ml) butter
- 2 cups (500ml) frozen vegetables, small cuts
- 1 1/2 cup (375ml) Basmati rice
- 2 3/4 cups (687ml) broth, chicken or vegetable
- Salt & pepper
Directions
- Melt butter in a large heavy-duty saucepan over medium heat. Add the frozen vegetables and sauté for 3-4 minutes.
- Add rice and cook, stirring until it is lightly browned and smells nutty, about 5 minutes.
- Stir in the broth, salt, and pepper and bring to a boil. Immediately lower the heat to a gentle simmer. Cover and cook until all of the liquid is absorbed, about 40-45 minutes.
- During this time, bake the Spanakopita according to the packaging instructions.
- Serve with the Spanakopita.
