Mini Quiche with colorful bell pepper medley

- 30 Cuisine Adventures Mini Quiches
- 448 ml (16 oz) Roasted bell peppers, drained
- 3 tbsp (45 ml) Olive oil
- 1/4 tsp (1.25 ml) Fresh parsley, finely chiseled
- 1/4 tsp (1.25 ml) Salt & pepper
- Heat the Mini Quiches according to the packaging instructions.
- Drain the roasted bell peppers and cut them in thin strips.
- In a bowl, toss together the bell peppers, olive oil, parsley, salt and pepper.
- Toss each mini quiche with the colorful bell pepper medley.
